      <image:caption>Lindis Honey is one of the largest producers of thyme honey in New Zealand. This honey is unique to Central Otago where the rugged landscape is defined by dry rocky terrain covered with fragrant wild thyme. It is fantastic by itself as a spread or in any recipe where you would use sage, rosemary, thyme or another robust herb. Marinades, stews, salad dressings all benefit from the natural combination of thyme and the sweetness of the nectar.</image:caption>

Enjoyed by itself, this honey starts with a hint of lemony citrus flavour. As the pallet warms the smooth, sikly nectar the soft sweetness offers a slight hint of mountian meadow grass. A perfect compliment to toast, crumpets, cheese or fruit.</image:caption>

      <image:caption>This honey is harvested from the remote high country regions of the South Island where the tall blue wildflowers cover the mountian sides and river valley flats. Vipers Bugloss has a delacate flavour with a floral, but mild taste. It is a very healthy alternative to sugar with a moisture content a little lower than most other honeys. This gives the honey a slightly chewy texture with a slow natural granulation. This enables the honey to stay liquid for a long time.</image:caption>
